Beef and Quinoa Stuffed Peppers



It's Crock Pot Contest week at Whole Foods Market Cooking and I entered beef and quinoa stuffed peppers slow cooked.  Normally I'll use rice and just bake in the oven, but this time I added quinoa for a boost in protein and fiber and let them go in the slow cooker.  Turned out to be very good!
