Zucchini Rice

I'm so far I've only picked one small zucchini from the garden and I'm seeing only blossoms - no fruit. At least I made this tasty rice dish with that small veggie...

3 Tbl butter
3 Tbl diced red onion
1 clove garlic, minced
3 Tbl of your favorite taco seasoning
1 small zucchini, diced
3/4 cup raw rice
About 2 cups water

In a sauce pan, saute the onion, garlic and zucchini until the onion starts to soften.  Add the taco seasoning and rice and stir everything together.  Add the water, bring to a boil and then turn down to a simmer.  Simmer covered for about 15 to 20 minutes, stirring occasionally, until the liquid is absorbed and the rice is done.
